For the study, Swedish researchers examined the blood sugar levels of 14 healthy volunteers before and after they ate a plain rice pudding dish and a cinnamon-spiced version of the dessert. According to the researchers, post-dessert blood sugar tests taken at two-hour intervals revealed that study participants’ glucose levels rose less markedly after eating the cinnamon-laced rice pudding. The researchers speculate that cinnamon tempers glycemic surges by slowing the rate of “gastric emptying,” the speed with which food travels from the stomach to the intestines. However, the researchers warn that it would be premature to use cinnamon as a diabetes treatment, noting that more information is needed to verify the link (Reuters, 6/20).
