Guest guest Posted September 9, 2004 Report Share Posted September 9, 2004 When went thru a dairy free stage on the diet, we used tinned coconut cream as an alternative, most times we froze it into an ice cream mixed with some canola oil, and it took care of the entire fat portion of each meal. Made like a coconut ice cream, tasted not toooooo bad at all actually, didn't need sweetener or anything added. It was a pain to make though, had to stir it several times during freezing to make sure all the coconut oil from the coconut cream didn't settle on the top. It didn't really have a 'cream' consistency either, that a lot of kiddies don't like. ----- Original Message ----- From: Atwater You mentioned that you switched the whipping cream to coconut oil.
