I am sorry I don't recall all of the details of this because we don't use eggnogs but I recall that when we started the diet a few months ago and were sent home with eggnogs I asked the dietician about using egg beaters instead of real eggs and she said that they shouldn't be substituted on a one to one basis. We keep them in the cooler with the cream and other diet essentials. I don't think that you can interchange eggbeaters for regular eggs. I have never used them. I served it with apple juice in water for her beverage (and carbs). It was a nice meal. And a change in texture for her. Just what I don't need! Did try the custard recipe of egg and cream mixed and baked (with stevia and vanilla) and it was a big hit! Great smooth texture.
