Ice cream recipe question

Hi!

Lately I have been making my daughter " ice cream " using her cream and

stevia and flavoring. Usually that is all that I put into it, if I

make ice cream on a stick. If I do the ice cream in a cup, I may use

those ingredients and a wee bit of water.

Problem: On the stick, of course, she is licking it, so it is great

that it freezes so hard. However, in the cup (which is less mess for

her) it is too hard to spoon out. What am I doing wrong? Should I

be whipping it as it freezes? Adding something? I do not add extra

oil, as she is down to a 2.5 ratio and any fat the menu needs, except

for the cream, I usually use as mayo or olive oil on fresh raw

veggies or butter on cooked veggies, as it is only a small amount.

Hi ,

We always add oil to 's ice cream or yep, it sets like concrete :) It

doesn't usually need stirring during the freezing with oil in, as long as not

too much is added. We find about 10-20 % of the cream total is needed here to

keep it a good consistency. Even 'normal' ice ceam that we buy apparently has

some amount of oil or similar ingredient to keep it smooth and 'un-concrete'

like...
