Monkey bread is biscuit dough cut into pieces, then you dip each piece

in melted butter, shake it in cinnamon sugar and put in a pan. the

pieces stack on each other.

when you cook it it makes an awesome yummy thing!

Ok, I had never heard of monkey bread, but you guys made me curious,

so I made a batch. It was a big hit with DH- in fact, I left half of

it with him on the couch and he shamefacedly brought it in saying,

" You gotta take this stuff away from me, I ate half of it. " I thought

he was joking, until I looked at the remnants. Haha. Good recipe, but

pretty guilt inducing, ingredient wise. DH gave it an 8/10, and I'd

give it 7/10, partly because i had trouble getting it to bake evenly

and bit into an uncooked bit of dough.

Here's a picture of the monkey bread! I didn't add any melted

margarine to the top, just sprayed it with butter flavored cooking

spray and sprinkled some sugar on top.

What makes this monkey bread recipe " bread " -ish? It seems to have

no flour of any kind. I'm TOTALLY confused.

I'm not sure that I'm looking at the right recipe, but the one I used

that was in Breads/ Sweet Breads had

1/2 c. potato starch

3/4 c. cornstarch

as the flour. I couldn't get that link to work for some reason..

Well after hearing all the talk about Monkey bread, I made it today for my daughter and EVERYONE loved it. In fact it was so good that there is nothing left, so I guess I will make more. I couldn't believe how great potato and corn starch cooked up, it was amazing. Thanks for sharing the recipe--it was nice to have something warm and sweet for my kids when they came home from school again.

Here it is:

1/3 c. shortening (can replace 1 tbs with soy lecithin)

1/2 c. potato starch

3/4 c. cornstarch

1 3/4 tsp xanthan gum

1 TBL baking powder

1/4 tsp baking soda

1 TBL sugar (I doubled the sugar for monkey balls)

3/4 c. milk (can also add 1 tsp vinegar)

1/2 tsp salt

Preheat oven to 375. Blend all ingredients.

I drop by a small ice cream scoop balls of batter

into a cinnamon/sugar mixture. Shake it around

to coat and then place ball into a greased baking

dish. After all the batter is coated and placed

in a baking dish, (you can have a single layer or

double it up) I drizzled margarine on top. Then

bake for 20 to 25 minutes.

The recipe I used pre-GF days was for "Sticky Buns". It had not only the brown sugar and butter, but called for 1 pack of vanilla pudding (the COOK type), and 2-3 tbps of milk. It made a slighly more caramel type coating. VERY yummy. I haven't yet tried it with GF rolls, but may be forced to if we keep talking about these.... ;)) Cheryl in MNrxp_us@...
