Homemade Waffle Cone Recipe

Summer is here as is the desire for a crunchy sweet waffle cone, if

you're like me. I adapted an on-line wheat recipe last night and it

was a hit.

Tools recommended - a waffle iron that has the flat pancake griddles

on the other side, so you can close over the batter and get an even

flat golden " crepe " to shape. If you have a fancy machine for this,

that would work. The recipe stated you could use a pan on the stove

top, my success with this was negative after attempting with 2

different pans and getting way too frustrated.

2 lg eggs

1/2 cup sugar

4 T of butter (melted and cooled)

2 - 3 T of milk

1/2 t of vanilla

1/3 cup Pamela's Baking Mix

oil for pan coating

Whisk together eggs and sugar until frothy (this works by hand fine).

Whisk in melted butter, milk and vanilla. Add flour mix and whisk

until the batter is smooth. It will be thin like crepe batter, add

milk to make thinner (I didn't need to do this).

Then ladle 3-4 T over hot griddle shut for 3 - 4 minutes until golden

brown. Gently use a spatula (metal, wood, whatever is safe for your

griddle) and scrap 'crepe' up and quickly place over shape desired.

As it cools the 'crepe' turns hard and crunchy like a real waffle cone

and taste as sweet!!!

I used tortilla bowls - shapes I bought years ago for making Taco

Salad shaped bowls. Bowls are just easier for kids to eat Ice Cream

and much less messy. I'm not sure this recipe would hold up to a real

cone shape as it is thin and brittle.
