I almost always will use Tinkyada Brown Rice Elbow Noodles or Tinkyada Brown Rice small Shell Noodles. Cook according to package. (I think they take 13-15 minutes of boiling time... a lot longer than regular noodles). Then I drain them. For the cheese part, I do this several different ways. Choose one way, but not all: 1) Cut a block of Velveeta cheese into cubes and then toss into the pot, pour hot noodles over the cheese cubes. Keep stovetop on low and gently stir. You can add a little milk if you'd like. 2) Sometimes I will use the powdered cheese packet that comes in the Kraft Mac & Cheese Box. I will make the Kraft mac & cheese for the rest of the family... mix the cheese powder, butter and milk separately... and then pour a bit of the cheese sauce onto the GF noodles and then pour the rest of the cheese sauce onto the regular noodles. 3) Sometimes I buy the Shells & Cheese (Kraft or Velveeta???? can't recall right now), but that gooey cheese sauce is GF... so I will use it on the GF noodles too. 4) Annie's (in Maine or Vermont) sells their dry packets of cheese sauce (which are GF) for about 50 or 60 cents each. If you like various flavors, this is the way to go. I used to order these, but I find regular Kraft Mac & Cheese for the same price, and use the cheese packet.... then I don't have to worry about ordering from Annie's. 5) Kraft also makes a cheese powder in a blue can (just like how cans of parmesan cheese are made). It is usually found in the aisle with popcorn.... for folks who want to add a cheesy flavor to their popcorn. Sometimes I will sprinkle some of that on, with a little butter and milk and voila. (I tend to bring this canister along when we travel as it is non-parishable. 6) I sometimes shred a block of cheddar using the shredder on my KitchenAid mixer, but I find our 5 year old prefers the other methods listed above. Most often, I use the Kraft dry cheese packet or the Velveeta. I don't get really involved with adding dry mustard, baking it as a casserole or any of those other "down home" sorts of mac & cheese recipes. It's just mac & cheese and I keep it simple. I think I already mentioned I do buy the Amy's GF frozen mac & cheese too.... as it is convenient. (I will take one along for our daughter if we are dining at a restaurant that offers mac & cheese on the kids menu.. then our son can order one if he likes.. he's not GF... and then our daughter can have one too).
