I'm not sure where you are at, but Kowalski (local to Michigan) keilbasa is GF (and some of the best out there). I'm not sure of the brand names, but I know someone posted a list of the packaged ones that are GF. There is also a recipe in the files for GF pierogi. I have made them a few times and they have been taste tested by my whole family with positive results. I won't make homemade bread, but I can do these -- WOW!
