sausage muffins

Nope, Nan, I like Atkins rolls and they taste like dessert because I roll them up with whipped cream and Splenda sweetened yogurt and it IS dessert. LOL Why try sausage muffins? But you know, I really should share my pumpkin muffin recipe. It is pretty good even though not appropriate for induction.

Jean's Pumpkin Muffins

2 sticks butter (8 oz), softened

8 oz. cream cheese, softened (sour cream will also work)

7 eggs

2 cups Splenda

2 cups vanilla whey protein powder

2 cups almond flour

2 teaspoons baking powder

2 teaspoons pumpkin pie spices

1 teaspoon vanilla extract

1 can pumpkin

Preheat oven to 350°F. Mix butter, cream cheese and Splenda. Add eggs, one at a time, beating with a mixer after each. Add pumpkin and mix. Set aside.Mix all dry ingredients in a separate bowl. Add slowly to pumpkin/egg mixture. Beat on low speed until well mixed, then add vanilla and mix again. Spray muffin pan with PAM. Pour in batter and bake at 350°F for 20-25 minutes. They are done when a toothpick comes out clean. Cool one minute before removing from muffin pan. Makes 12 jumbo muffins or 24 regular sized muffins. I store mine in the refrigerator. They are great warmed with butter, cream cheese, or whipped cream. Best of all, you can't tell there are eggs in there! ;-) I did the exact carb counts on these, but I didn't right it down on what I have here. I think it was like approximately 5 grams per small muffin and 10 per the jumbo muffins, like I said, not for induction, but good when the need hits. They are very much like the real thing and are not overly pumpkin tasting.

I'm not an egg hater but I don't like what isn't an omlette to taste

like an omlette. Which is why I don't like the atkins rolls.

But I DO like the sausage muffins. I made the ones with 4 eggs per 1

lb of meat (there is one out there that calls for 12 eggs for the

same amount of meat), and they did not come out omletty. I guess the

protein powder and the cheese take the edge off it.

See Ruthie, you get it!!! My mother used to say the exact same thing about

the stuffed peppers when I was a kid... she just didn't " get it " that I

could taste the green pepper. And this is how I feel about the sausage

muffins. It's not that I can taste the egg, per se, but I just don't care

for the texture. I like eggs and I love sausage and I like cheese and cream

too... perhaps it's the bake mix that changes it? I dunno. But I've also

made these w/o the bake mix and didn't care for them then either. oh

well, guess I'm just not meant for sausage muffins! LoL

stuffed peppers and say " you can just eat the meat and leave the pepper " .

She just never got it that I could still taste the pepper!!!

I am so disgusted! I wanted to make these for tomorrow, so when I went

shopping this morning at a smaller, family-owned grocery store, I bought

a package of sausage. When I got home, my husband looked at it and

said, " Oh, you bought 's sausage with brown sugar. "

I said " WHAT??????? "

Well, he used to work there years ago, and said that they use an old

recipe with brown sugar to make their sausage. I told him that was

ridiculous, as the ingredients aren't on the package, it's just labeled

as " sausage " . If they put brown sugar in it, they should list the

ingredients.

I am so irritated. So here sits a package of sausage that I won't use.

Should I pass it on to my diabetic parents? Don't think so!!!

What about the diabetics who unknowingly buy this stuff?

I just really P.O'd. Can you tell????

So now I have no sausage for the recipe.
