How do we know they are SCD legal in the sense of definition that they are not processed and have certain number of hrs. of making etcc. If the cheese is in the Cheeses permitted column (from the appendix of BTVC) and it is not grated, doesn't have things other than cheese added (sometimes you'll see red pepper cheese or other foods mixed right in) and isn't " light or Lite " cheese, reduced fat etc. then it is okay. In other words if it is straight forward cheese it is good. If there is secondary processing (pre-grated shredded etc.) or extras then it is fishy. Not to confuse you but some delis will grate parmesan cheese. It should be labelled 100% parmesan cheese and have no " free-flow " agents. This is not to be confused with the containers of parmesan cheese that have " extras " added to keep it from clumping. That is is the stuff that is unrefrigerated that you'll find in the aisles of the grocery store. If in doubt you can always grate the blocks of parmesan yourself at home. It's not aged and so would not be allowed on SCD. Sorry. We just use cheddar for Mexican. You can buy cheddar that hasn't been colored (so it is still white).
