I am getting really bored! We seem to eat chicken and rice or steak and

potatoes at every meal! I need some ideas! We did have tinkyada's pasta

tonight and it is really good. I was surprised. I really didn't want to try it

but it is good. Strange thing though is that my son seems to fill up faster on

that pasta than he did on regular pasta.....strange.

We still can't have dairy so I am clueless as to what to try next. I think I

may try chicken taquitos or something fun but I love sour cream and can't have

that yet......salsa would be fine I guess.

Anyone know of some GOOD dairy free cheese? My family is really missing that

right now. We were big cheese eaters. My son keeps asking for pizza and I told

him I would try to make some but we need some kind of cheese........

This week is crazy. DD is going through admission interviews and financial aid

stuff for the college she wants to apply to and DS 8th bday is on Friday and his

party for the family is here on Sunday and not sure what I am going to serve.

We used to just order pizza and have salad because that was my son's favorite.

I may make chicken and salad. Not sure what else....He has requested sugar

cookies with raisins and sprite for his party at school. Not sure on that one.

We don't let him have sodas very often but for his bday, I think I will make an

exception!

I need to get a copy of Bette Hagmans book. I had checked it out from the

library but I think I need to own a copy.

I am so tired and rambling......

Can you have soy? There are several brands of "fake" cheese that use soy. When I was Vegan, I used Tofuiti Sour cream, which has no dairy, and it's pretty close to the real thing as long as you don't eat it straight....tried it one time. But on tacos, etc, it's great. You have to watch it with the cheese that it doesn't have wheat....I don't remember if I was gf and Vegan at the same time......but I think so because my son was already gf. The cheese that's good is kept in the refrigerator section at whole foods, but I don't remember the brand name.

And as a note, your son is probably getting filled up faster with Tinkyada because regular wheat pasta wasn't being absorbed, so he still felt hungry. I got that yesterday. My MIL made chicken enchiladas, with my gf flour tortillas I made, but she used the same cutting board she used with regular tortillas. Half an hour later I was hungry and had diarrhea. (I think she did it on purpose to see if I had a reaction, because she didn't say anything until I was trying to figure out what caused it....another mean person, and she does all the cooking in this house.)

How about some seafood dishes? I love baked haddock with butter and

crackers crumbled over it. (I know the butter won't work for you,

but you can always substitute it.) We normally do it with spinach

(cooked in alittle soy sauce) and a side of rice.

Or Honey BBQ Salmon on the grill with veggie skewers on the side and

a potato packet(we slice potatoes thin then add butter or olive oil

and some spices, wrap in tinfoil and grill). And each person can

add what they want to their own packet. My husband likes onions in

his! I like mine with extra butter(I know, I know, it's not good

for me, but it's oh-soooo tasty!!). LOL

Another seafood favorite of ours is Shrimp Pad Thai over flat, wide

rice noodles (Notta-Pasta works well). If you'd rather, substitue

the shrimp with beef or chicken. Try a chicken/beef stir-fry with

veggies over the rice noodles also.

I hope some of these ideas spark your creativity. If you can't tell

we eat alot of seafood in our house. I work for a seafood company,

so I have these at my access all the time. If you want more seafood

ideas let me know! I have a bunch!

Since he likes peppers, what about stuffed peppers. I know it's not a huge step away from rice & meat, but at least it would change how it looks on the plate!

Can you do eggs? Omelets or frittatas are a good, and a good way to get other veggies in the kiddos too.

Pancakes? We like pumpkin pancakes for something different -- or bananas, berries, etc.

Also, guacamole might be a good substitute for sour cream with the taquitos.

nite!Zanna For the birthday cake, what about a "fruit pizza?" You use GF cake batter/mix, spread thin for the crust, bake, then top with GF vanilla pudding (you can make it with nut milk) and fresh fruit? For ice cream at birthdays, our casein-free family members use Haagen Daaz (sp?) mango, or strawberry sorbet. As far as cheese on a pizza goes, try thinking out of the box. The soy products aren't good for young boys, too many phytoestrogens. Why not make a nut cream topping to go over the marinara sauce. (Soak raw cashews or macadamias for 2 hours, then puree in blender with water until smooth; add either kefir starter cultures, or add apple cider vinegar or vinegrette dressing to make it more tart if you prefer.If you use the kefir starter, it tastes like sour cream) Or, go cheeseless altogether. When I make pizza for our 3 year

old, we top the crust with marinara, and all her favorite veggies and meats, or fruit. Any weird combo she likes. Traditional - sausage, olives, mushrooms, etc. Bar-b-Q- BBQ sauce instead of marinara, BBQ chicken, onions, peppers. Fruit - No marinara, but plain fully baked crust, brushed with nut cream, and topped with apples, pineapple, kiwi, strawberries, whatever she likes. As far as daily menus go, what about stir-fry night? Or meatloaf and mashed cauliflower with TONS of melted ghee and nut milk (a true favorite to replace mash potatoes here). Or, spaghetti using spaghetti squash for noodles, just bake and strip the squash strands. Or soups/stews. Or lettuce wraps -- put the bacon and tomatoes inside the lettuce and rollup burrito style. Meatballs -- with or without sauce -- go great over the rice pasta. (And you can hide grated

veggies inside :) Or, breakfast for dinner -- scrambled eggs, pancakes, bacon or sausage, fruit and juice. I'm sure you'll fine "new" favorites. The reason you miss the cheese, aside from the wonderful flavor and texture, could be the fat. Your body does need some fat, and eliminating dairy can cause a deficiency in some people. Make sure you guys include enough olive oil, nuts, coconut oil or ghee in your diet. Don't be afraid to incorporate more fatty cuts of meat. We found that while healing our intestinal damage, we needed a LOT more protein and fat in the short run. Rebekah

Hey Zanna, my daughter Molly, can't have dairy right now either, but we have found some excellent goat cheeses around here--I think Whole foods carries them. If you can have soy, then there are some great soy cheese and rice cheese to use. We have also found some dairy free sour cream, and even sheep cheese that is very good. It's hard sometimes, you feel as if you are in a rut. I know when my eldest daughter was diagnosed with 20 food allergies when she was 2, i had no idea what to make, in fact I was paralyzed with fear about poisoning her. I think I gave her bananas, baked cod, baked potatoes and peas for two weeks before i had the courage to make anything else!

We have been eating a lot of pork lately because we are also a bit

bored with chicken. So pork roast with lots of garlic and pepper, pork

chops, and ham. We have also been eating Orida Tater-tots I'm getting

tired of these but hubby likes them and he is the Celiac. You need to

read the labels because some varieties have wheat. Another favorite

around here is big salads with hard boiled eggs and chopped ham or

turkey. Chicken fajitas with corn tortillas or without tortillas. Hubby

and daughter like artichokes as a main dish (yuck) so they usually have

those on Monday nights when I work. Tacos or tostadas you could do

without the cheese or with a soy cheese.

I wonder if goat cheese would cause the same problems for you? Goat

cheese is very mild and tastes pretty good. People say goats milk is

better for you than cows milk but I'm not sure why that is?

there are so many, very good GFCF recipes there.

also, look for pareve recipes on the Jewish cooking sites. Those

will all be CF and you can just choose the ones that are naturally GF

or make changes to turn them GF.

I'm making a beet edamame stir fry for the first time tonight. I'll

let you know how it goes. The recipe sounds wonderful.

You could make the blueberry pudding cake for your family get

together on Sunday and put some soy icecream on top of it. The cake's

recipe is in the files.

I make pizzas using the Chebe mix (sans cheese). It makes a very

thin and crispy base. My family likes it if I puree a mango, add

lots of cilantro and then spread it over the base and top it with

thin slices of chicken.

my favorite is I make an eggplant mayo and spread that on the base

then I top it with a selection of grilled veggies. (zucchini, onion,

mushrooms etc). it is so good.

ups is this weekend and I'm torn on which animal to have my son raise (pigs,

sheep, or

goats). My mom is getting a couple of goats and we have discussed breeding them

so we

could get some goat milk around here....even though I'm not a big fan of the

flavor; I'm

convinced I can acquire a taste for it.

We are diary and gf and not struggling as much anymore.

We use earth balance butter it is dairy and gf - they have it at trader joes and wf. I use the sticks for baking and the tub for regular use. it tastes great.

I don't know if these cheeses are at tj but I use them alot.

I buy them at wf.

galaxy nutritional foods vegan parmesan alternative

and follow your heart vegan gourmet cheese alternative mozzarella or the cheddar I have to shredd it but it works for pizza and tacos

All these cheeses are made with soy though.

I make a great garlic shrimp alittle lemon juice, chopped garlic, salt pepper, alittle parmesan and a little olive oil. I even use precooked shrimp when I need it quick. I serve it over tinkyada's spaghetti noodles.

How about a salad for dinner? Lat night I had a very

good Chinese chicken salad with Romaine, sliced

chicken, Mandarin oranges and a g-f dressing. You

could add a few rice noodles to this, as well.

Tonight it's going to be vegetable soup. I make a lot

of soups and freeze what I don't eat. They are

usually healthy, delicious, and not difficult, except

that some of them do take time.

Do you eat fish or seafood? Sauteed scallops or

shrimp on rice is fantastic, and sooo easy! I do

scallops in a teflon pan with no oil, just a little

paprika on top, salt and pepper. Sautee for 4 mins on

each side for the larger scallops, put them on the

rice, make a quick reduction sauce with a couple

tablespoons of lemon juice and a pat of butter right

in the pan, and in 10 minutes you have dinner! Just

add a frozen or fresh veggie!

Shrimp are almost easier, if that's possible, just use

pre-cooked frozen shrimp with tails off. Melt some

butter, put the shrimp in, sprinkle with garlic sauce

and heat. Serve on rice. Delish!

Salmon is really good poached, which is the easiest

way to do it. Bring the water to a boil in a skillet,

add onion and lemon slices, and poach for about 8

minutes at a very low simmer. Best Foods tartar sauce

is g-f, and good with salmon, or just use lemon

wedges. I got this idea from one of Betty Hagmann's

books, but it's so simple it doesn't need a recipe.

I made a wonderful salad for lunch.

Baby spinach

spring mix

strips of jicama

honey dew melom

strips of red pepper

a handful of blueberries

sunflower seeds

Dressing:

orange juice reduction

garlic

balsamic vinegar

then for my dressing I added a touch of spicy pecan vinegar. I left

it out for the rest of the family.

it was outstanding.

I've made a spinach and bean dish for my husband to take to work

tomorrow and a salad with romaine lettuce, sticks of beet, finely

sliced red onion, mandarin orange and almonds. then I blended a

tomato and blood orange vinegar for the dressing.

oh boy, don't ask me then, I guess I don't know. I do know that Molly is able to handle goat and sheep milk without any difficulty...but I had no idea about the casein, etc. I think the others on this list are much more knowledgable than I am!

I guess in the VERY beginning, I got bored. Probably more frustratedthan bored though. Had to look at the glass being half full than halfempty. We eat TONS of more fresh veggies and international mealsthan we ever thought of!!

We eat alot of Mexican based food. Lots and lots of " stuff " rolled up ina corn tortilla, nachos made with corn tortillas and a mix of either blackbeans and corn or taco seasoned ground beef or turkey. I made a really

good pork loin, shredded and broiled (a Martha recipe) and we ate themwith salsa and sour cream on top of....AREPAS!!! Yum Yum!!Speaking of turkey one of our latest goodies are turkey burgers. Onepackage of the most lean turkey meat mixed with seasonings...one is

poultry seasoning which I NEVER used before except for cornbreadstuffing...mixed in and then stuffed with blue cheese (make sure it's gfor you don't have a problem with it. Hubbie and oldest eat theirs on buns

while youngest and I eat them in lettuce leaves (Matt) or just cut up (Me).It's easy and quick to pan fry them in a little olive oil. I made a huge pan of Baked Ziti (with Tinkyada penne) on Monday night.

And was even able to freeze some for later! I made a loaf of Onion andCheese cornbread on Sunday. I admit it, I STOLE the recipe from a cookbook at a store I was at. It's on the back of a receipt. Since we like the

bread though, I'll probably go back and get the whole book!!I get the 5lb bag of itty bitty potatoes at the 99cent store. Bake 'em andcool them. Cut in half and scoop out the insides. The insides make awesome

mashed potatoes. And the Scoops are great with bacon bits and cheese...orwhatever you like for stuffed skins!! We usually get two meals out of these!Just heat them up the next night!!! I used the mashed potatoes for Shepherds

pie once. Made my own brown gravy with a can of beef broth and cornstarch. : )Right now, I have a pot of Emeril's Split pea soup on the stove. WITH afew Cardomom pods!! Am looking forward to seeing what it comes out like!!!!!Lots and Lots of GREAT ideas off this list!! and I never got " bored " !We're foodies who like exploring and really remember what it feels like whenwe goof!! We have some hits, and some misses.

I apologize. When I was writing about the shrimp, I

meant sprinkle with garlic SALT, not galic SAUCE. I

hope you guys didn't think I was nuts, altho I may

be!!

However, the casein between species is different enough that some people who

cannot tolerate cow milk casein, can tolerate the casein found in other mammal's

milk. There is a high cross reaction rate, though. My milk allergic son cannot

tolerate goat or sheep milk. I've not tried any others. He could only tolerate

my milk when I avoided consuming all mammal milk.

Interesting fact I learned in my research into milk allergy: camel's milk is the

least allergenic of all milks. Before you all run out and buy a camel, please

note than camels hiss and spit and refuse to let down their milk unless they

like you and they feel like it. Very temperamental creatures. :) There is a

camel dairy in Ramona, CA (not too far from me) that sells camel milk as " pet

milk " .....

I cooked a meal for 10 people last night and it was delicious. I made salmon

drizzled with olive oil and kosher salt. Broiled for 10 minutes. I made new

potatoes that I cut into 4's and drizzled with olive oil and some spices and

cooked for one hour. We had shrimp cocktail for appetizers and salad and fresh

veggie platter. Beverages were decaffienated ice tea and water. Everyone said

it was really good. For Brody's bday cake, I made him gluten free brownies and

also made the blueberry pudding cake but used raspberries, blackberries,

blueberries and strawberries. That is my favorite. Everyone loved the dessert,

even the glutenoids. It made me feel good.
