Hi Steph

I cooked " mac " & cheese for Joe and he loved it!Thanks alot for the

idea.I thought I would try your idea thirst as he used to like real

mac & cheese before keto diet.Thanks again

> You can make mac & cheese using the zucchini as your " macaroni "

and also maybe a tomato based pasta as well. The recipe below was

one in our keto handbook-

> " Mac " & Cheese

> Zucchini

> Velveeta Cheese cut into small cubes or slices

> Shredded cheddar cheese

> butter

> cream

> pinch of salt & pepper

> Preheat oven to 350 degrees. Steam or microwave zucchini, then

weigh. Melt butter in sauce pan. Wisk cream into saucepan and bring

to a simmer. Cook until slightly thickened. Season with salt &

pepper. Add the butter-sauce to the zucchini and stir, coating well.

Pour coated zucchini into a Pyrex baking dish sprayed with non-stick

cooking oil. Sprinkle half the shredded cheese and half the

Velveeta. Repeat layers & then bake. Remove cover when cheese is

melted and bake until cheese is bubbly.
