I have canned for my family for years and when it was time to do

peaches and applesauce, I ended up making special jars for Hannah

using Splenda to can the applesauce and peaches for her, because she

didn't like store bought applesauce and I've never found canned

peaches that didn't have sugar. Anyway, just to let you know there

are many things you can do! I do have the benefit of being a stay-at-

home mom so I didn't have to juggle trying to work and cook for her.

She is the youngest of our 4 children, so I did have to work around

other children.

I tried to keep her dinner as much like ours as possible. If we had

roastbeef, potatoes and carrots, I would give her the meat and

carrots along with her cocoa! Also, I would make special treats for

her and the other kids weren't allowed to eat them. The internet is

loaded with low carb recipes and websites and I would just surf and

try recipes out myself. If I liked them I knew she would like them.

One easy thing we always did, she liked american cheese and we would

make " cheese puffs " out of it.

Line a Corelle dinner plate with Reynolds saran wrap. Break the

slice of cheese into 12 equal squares and line them on the outer

edge of the plate all the way around it. Place in microwave for 1

min. on high, take out and cool for a few minutes, they pop right

off the plastic wrap and are crunchy. Sometimes we would sprinkly

Hidden Valley Ranch powder (that you use for making salad dressing)

on the cheese before we cooked it, or cheddar cheese powder for a

different twist to it.
