Guest guest Posted January 1, 2002 Report Share Posted January 1, 2002 Microwave No Fat and/or Sugar Free Rice Pudding 2 -1/4 cups skim milk 1/2 cup Minute-style rice 1 box Jell-O Brand Cook and Serve Vanilla Pudding Regular or Sugar Free ~DO NOT USE INSTANT~ 1 tsp. vanilla extract 1/2 to 1 tsp. cinnamon, optional* 1/4-1/2 cup raisins (optional) Place paper towels in microwave to absorb any boil overs. In a round, 1-1/2 to 2 Qt, glass container: Mix dry ingredients very well Stir in milk and vanilla Add raisins, if desired. Microwave, uncovered, on HIGH for 3 minutes Stir Repeat the 3 minute cook and stirring two more times. Depending on oven power, pudding should be thick and rice tender. If not, repeat 3 minute step. Let pudding stand until cool. Taste for sweetness. If needed, add extra sweetener.
