Guest guest Posted August 3, 2006 Report Share Posted August 3, 2006 Ok, I made it with Strawberries and w/o cinnamon last night!! ... oh, you want to know how it came out? .... well, it's all gone, LOL, does that tell you anything ;0) Hubby's birthday is on Saturday and guess what he wants???? This time I'm going to make it with *pineapples* woooo hooooo!! This recipe has been a HUGE blessing**** easy as pie to make and very filling!!! I made it last night it came out of the oven at 6PM and was gone by 9PM!!!!!!!! It lasted a total of not even 3hrs, LOL!! Yes, we do in fact have air breath-upright walking-empty stomach syndrome "piranhas" here! LOL! I could not see adding another 3/4 cup of sugar just for the topping. Fran, I think if you wanted to skip the extra sugar, the one to skip would be on the berries! The sugar, cornstarch and boiling water on the topping is what makes this recipe unique. It's a very different crust than most cobblers, and the end results wouldn't be the same. I used Bette Hagman's GF flour recipe,very disappointed. I have realized that the recipe time is off (at least for me) I have been adding an extra 12 mins to finish, if not it too comes out gelly-type, and my oven is brand new!! ;0) I'm preparing hubby's *birthday* "Pineapple Pudding Cake" for tonight, lol. It has been a very hard transition for me to come off wheat, and I have been VERY disappointed with the results of my baking attempts. But today gave me hope that maybe this won't be so bad after all. This is definately going to the top of the dessert list. If anybody has any really good results with different fruit, please let me know, cuz I'm not the biggest blueberry fan. I made it with strawberries, and it was great. I also made him some coconut ice cream and he had it ala mode style, LOL. I have made it so far with peaches, blueberries, strawberries, and now pineapples!!!!! I will note though that I had to make two, the first one was gummy, solely because pineapples reserve loads more water, so when I made it the second time I cut back the water to 3/4 of a cup instead of a whole cup.
