An online friend of mine has the same problem. Her doctor was

recommending bypass surgery when she tried South Beach as a last ditch

effort before going for it. She and I were chatting at that time and

during the no bread/grains first two weeks she did great and lost almost

20 lbs (she had a lot to lose.) During that time I read an article about

a man who weighed close to 400 lbs and was on the table, having the

surgery done, when they noticed something strange about his intestines.

They stopped the surgery, did biopsies, then did the blood work and

found he was definitely celiac. I told this to my friend (whose doctor

scoffed, so she hasn't had any testing done) and she decided to stay gf

while dieting. She lost steadily after years of not being able to lose

at all. However, whenever she ate something with gluten, she'd gain

almost 10 lbs overnight and not lose an ounce for almost two weeks

after. The worst thing about this is that because of her doctors, she

really doesn't think of herself as having gluten issues (she's one of

those that definitely needed someone to tell her " you cannot eat wheat! "

for her to stick with the program.) Without any other symptoms, once she

lost a good bit of weight (but not where she needed to be) she began

waffling all the time.

I've also heard the statistics where 1/3 are " typical celiacs, " 1/3 show

no obvious signs, and 1/3 are " atypical " basically meaning overweight

(and often very overweight.)
