I wanted to include a bake mix recipe for folks who are looking for maybe some biscuity things for breakfast. Ultra Low Carb Bakemix (ULC) 4 cups soy protein isolate 2 cups soy flour 1 1/2 cups oat flour 1 1/2 cups almond flour 1/2 cup vital wheat gluten 4 tsp baking soda 5 T baking powder 2 tsp salt It yields 10 cups and I will include a few recipes for it's use here in a sec. Per cup it's 501 calories, 24 g fat, 26 g carbs, 50 g protein. Note: when I say protein powder, I mean a shake mix with 3 grams of carbs per cup. That's what I use and found it at our local GNC (nutrition/weight lifter store) They come in all kinds of flavors and loves them. Biscuits: 2 cups ULC 1/2 cup cold butter 2 eggs 3/4 cup buttermilk Preheat oven to 400. Spray or line 8 muffin tins. Cut cold butter into ULC using 2 knives or a pastry cutter. Make a well in dry ingredients. Beat eggs slightly with buttermilk and add to well. Mix just until well incorporated. Scoop into muffin tins and bake for 20-25 minutes, until golden brown. 8 servings with 256 cals, 19 g fat, 7 g carbs, 15 g protein. For variations or to add more fat, mix in browned and drained sausage, cheese and garlic powder. Heck I even like these. Cran-Orange bread: 1/2 cup splenda 1/3 cup buttermilk 1/2 cup sugar free vanilla syrup (davinci's is what I use) 1/4 cup orange juice 1 T orange zest 2 1/2 cups ULC 1/2 cup cranberries, minced Preheat oven to 350. Combine all ingredients in mixing bowl in order listed and blend just until moistened. Bake about 40 minutes in well greased loaf pan, until a toothpick inserted in the center comes out clean. 16 servings with 94 cals, 4g fat, 6g carbs, 8 g protein. Omit cranberries for less carbs. variations to above substitute 1/4 cup poppy seeds for cranberries and lemon juice/zest for the orange juice/zest (112 cals, 6g fat, 6g carbs, 9g protein) OR substitute canned pumpkin for cranberries. Omit lemon juice/zest and add 1/4 tsp ground cloves, 1 tsp cinnamon, 1/4 tsp ginger and 1/4 tsp allspice (91 cals, 4g fat, 5g carbs, 8 g protein) Pancakes: 2/3 cup ULC 1T heavy cream 1T oil 1T sugar free vanilla syrup 1 egg 2/3 cup water Whisk together gently and fry on a very hot greased griddle, turning only once. 2 servings in this recipe for 291 cals, 20g fat, 9g carbs, 19g protein Hope it helps y'all. Hi guys We have been actively practicing with low-carb( a-la Atkins) diet for the last few months( ph is going on keto diet in august and I am trying to get him ready as much as possible).Our biggest problem is breakfast.I just do not know what to cook except eggs.I do not have very good imagination and all low carb books I have offer eggs for breakfast.ph loves eggs ang is ready to eat them 24/7 but he has allergy (exema) that appears a few hours after he eats eggs.I would appreciate any breakfast ideas.He also loves wipping cream,eats it unsweetened with spoon.So maybe there are also some ideas how to use wipping cream for breakfast? The rest I added myself over the years. No matter how decent I am, my sister-in-law is scade better. She is a professional baker and man sakes alive does it show.
