Being allergic to natural rubber latex, I've discovered that *many* restaurant workers wear gloves and since latex is cheaper than vinyl or nitrile (when it comes to fitted gloves), those are the ones commonly used. Sure, some food service workers use the cheap, unfitted plastic mitts, but those are difficult to deal with, so more and more managers order in fitted gloves. Some restaurant chains pass corporation rules against using latex, both a measure to prevent worker's comp losses and to prevent customer reactions. It seems that fancier restaurants are less likely to employ gloves, unless the local health department is draconian. I'd rather see *no* glove use at all and frequent handwashing, but I know that ends up in horribly chapped hands. It really irritates me to see waterless washing becoming common in doctor offices. Everyone uses that darn sanitizer, which frequently contains stuff I'm allergic to (aloe, fragrance, preservatives).
