I ended up finding a Bob's Red Mill Chocolate Chip Cookie mix in my pantry and used it. I added an extra egg, more chocolate chips, and a few tablespoons of powdered sugar to help soak up the extra liquid from the egg. (It is a very thick dough anyway.) I rolled out about 3/4 of the dough onto my 15 " pizza stone, leaving room for it to " grow " during baking. It turned out great! Next time I will use the dough to make 2 smaller ones, instead of 1 giant one with some leftover dough. I decorated with icing and served with ice cream. It was awesome! My dad said he thinks it was the best GF dessert yet. (and that is shocking considering how much he loves my snicker pie out of one of Bette Hagman's books!) It has convinced me that I will always have that mix on hand! I can make the dough, use half to make one cookie cake and freeze the other for later. Then I am always ready for the kids' friends to come over for a treat or to supply a goodie if we are visiting another person's house.
