I peel them thinly using my veggie peeler, but leave a bit of the nice purple. Taste a piece raw. It is good. You could even eat some raw in a salad. You can also peel, & slice like french fries & toss lightly with a tiny bit of oil, season with salt & pepper & bake them... sort of like oven fries. Ever had rutabaga? That's another delicious veggie to try. Peel & cut up like potatoes & boil. Add salt & pepper & butter Buds (or butter). YUM! Taste of piece of rutabaga raw too. Very tasty & again can be eaten in a salad. Sorry I cannot help with parsnips as I've never had them.
