Jacquie

Tuna Loaf

2 cans tuna

2 eggs

1/2 tsp lemon pepper

1 tsp lemon juice

1 tbsp chopped onion or dried onion

1 cup soft bread crumbs

1 cup milk

1/2 tsp salt

Mix all ingredients together. Press inot greased loaf

tin or casserole dish and dot with butter or margarine

and bake in 350 oven until firm and brown. (30 -45 min

min).

It's a good alternative to meatloaf, is low in fat and

goes well with green beans.

This isn't exactly a casserole recipe but it's very delicious, imo.

It's a Lebanese dish that my MIL taught me to make.

Tuna Tarratore

4-10 cans of tuna (we scarf this so I make it extra huge with 10 cans)

2-6 onions (enough onions to cover the loaf)

1 cup tahini

juice of 3 lemons (I use ReaLemon)

1 clove of garlic, crushed well (I use powdered to equal a clove, or to

taste)

Drain all water out of tuna, I literally squeeze it with my hands. Form

into loaf shape on a platter

Brown onions in oil (vegetable or olive) until caramelized, medium to

dark brown. They'll be sweet by this time.

Mix tahini, lemon, and garlic together. Add water until smooth & creamy

& pourable. This is the tarratore sauce.

Pour tarratore sauce over tuna loaf until covered. Cover entire loaf

with onions.

Serve.

We eat it with pita bread, and use the bread to pick up the tuna

tarratore.

Ok, the ingredient list came all squished together & confusing so I'm

reposting. Hopefully this time it will post the way I meant it to.

Tahini is sesame paste. Not at all yogurt based. Tahini is totally

gfcf.

Re: recipe request

Debbie, this sounds WONDERFUL -- but isn't tahini yogurt-based? :-(

I'm

not sure.

For everyone else whose recipes include milk -- do you think soy milk

would

be all right substituted measure for measure?

I believe tahini is ground sesami seeds. I will look. :)

Yup, I'm right.

I have used water in a lot of dishes that call for milk with good results

when the milk is simply for liquid. I don't know of a good sub for sour

cream, unless you tried maybe plain soy yogurt or goat or sheep milk yogurt.

I've got great recipes for Hummus and Baba Ghanoujjie ( " Baba Ganoosh " )

if anyone wants those too. They are great dips.

Oops, sorry Jacquie, wasn't thinking. I don't know

about soy milk, but in the tuna loaf recipe you can

substitue water or consomme for the milk.
