Hi I have tried this great idea and it is great...My family loved

it. One thing though it came out real watery. Is there a trick to

avoid this??? advice would be greatly appreciated I plan on trying

it again tonight. Thanks & Hugs!

nette, i found the same thing happened, Watery, but i poured it out

the side ,melvin said it was fine ,so i can`t tell you what the answer

is ,maybe someone else can ,one thing did you put water in your sauce

like to rinse the jar out, that is the only thing i can think of, next

time no rinse the jar

I LOVED this lasagna, and the leftovers are superb... but I agree, mine came out

watery. The

next time I make it, I'm going to salt the zucchini and let it sit for a while,

the rinse it and

pat it dry and try again. In fact, I'm going to lay the slice son paper towels,

put some paper

towels on top, the put a cookie sheet and some can on the cookie sheets, to help

drive out the

liquid. I also wish I had a way to get the slices uniform without buying another

piece of

kitchen equipment (my kitchen is about 5x8). All in all, a FABULOUS lasagna!

Here is it is. I believe Amber from FL is the originator of this.

Zucchini Lasagna

Ingredients:

spaghetti sauce (look for the lowest sugar and carb sauce around -

seems like maybe it is Prego (I make home made)

very lean ground beef (7% fat max)

ricotta or small curd cottage cheese (low fat)

1 egg well beaten

mozzarella cheese

parmesan cheese

added garlic, onions and spices if desired

zucchini

Brown, drain and blot the beef and put in the spag. sauce to simmer.

Wash and thinly slice the zucchini squash. Slice approx 1/8 " thick (I

use a mandolin to get uniform thin slices).

Mix beaten egg with ricotta or cottage cheese (or use both alternating).

Lightly cover bottom of baking dish with meat sauce

Add single layer of zucchini

Cover with cottage/ricotta & egg mixture

Sprinkle with Parmesan cheese

Add layer of zucchini

Cover with meat sauce

I usually do 3 layers of each ending with meat sauce.

Bake in 325-350 degree oven until it begins to bubble, then add layer of

mozzarella cheese until melted and beginning to turn brown.

I've ever eaten zuchinni but I know I LOVE squash. I very seldom

eat veggies, I know I should, I just don't fit them in. Thanks for

Here it is, a!!! This is a recipe from Amber in Florida - thank you, Amber!

Amber in Florida, maybe since the recipe leaves so much room for experimenting,

you could be

more precise with measurements.... Maybe that's why mine was watery!!!

When you say squash, Lynn, do you mean the yellow stuff? I bet this would be

good with the

yellow stuff. Zucchini is the green stuff that's just like the yellow stuff,

except the taste is

a little different. Try it - you might like it!

This is fantastic with EGGPLANT too! Word of caution tho... slice

the eggplant and lay it on paper towels. Salt the eggplant lightly

and let it sweat out the water, othewise your lasagna will be a

little watery.
