Is there a trick to avoid this??? advice would be greatly appreciated I plan on trying it again tonight. Guest guest Posted March 28, 2003 Report Share Posted March 28, 2003 I LOVED this lasagna, and the leftovers are superb... but I agree, mine came out watery. The next time I make it, I'm going to salt the zucchini and let it sit for a while, the rinse it and pat it dry and try again. In fact, I'm going to lay the slice son paper towels, put some paper towels on top, the put a cookie sheet and some can on the cookie sheets, to help drive out the liquid. I also wish I had a way to get the slices uniform without buying another piece of kitchen equipment (my kitchen is about 5x8). All in all, a FABULOUS lasagna! Sharon in D.C. Zucchini Lasagna Ingredients: spaghetti sauce (look for the lowest sugar and carb sauce around - seems like maybe it is Prego (I make home made) very lean ground beef (7% fat max) ricotta or small curd cottage cheese (low fat) 1 egg well beaten mozzarella cheese parmesan cheese added garlic, onions and spices if desired zucchini Brown, drain and blot the beef and put in the spag. sauce to simmer. Wash and thinly slice the zucchini squash. Slice approx 1/8 " thick (I use a mandolin to get uniform thin slices). Mix beaten egg with ricotta or cottage cheese (or use both alternating). Lightly cover bottom of baking dish with meat sauce Add single layer of zucchini Cover with cottage/ricotta & egg mixture Sprinkle with Parmesan cheese Add layer of zucchini Cover with meat sauce I usually do 3 layers of each ending with meat sauce. Bake in 325-350 degree oven until it begins to bubble, then add layer of mozzarella cheese until melted and beginning to turn brown.
