Guest guest
Good morning, everyone Well, did not have eggs for dinner last night, but did have them for breakfast this morning. I know it is not possible for everyone to purchase " real country " eggs, but if you can, it is worth it. A good place to look for them is at farmer's markets. Also as you are driving along the highway, look for signs. That is how I found them. hugs Eunice

Guest guest
Eunice, I like your idea but I often wonder if I don't know exactly where these country fresh free range eggs are coming from, I don't know what they are eating either???? I used to work at a farm that also had an egg farm with more chickens than you'd want to think of in one place. I thought it would be horrid and the chickens unhappy but I was very surprised to find that they were very content, fed and watered well. But then again, this chicken/egg farm was well taken care of. Actually I think they all are or the egg companies won't renew their contracts. Anyway, they had brown eggs and I always got to take as many as I wanted whenever so they were always fresh for me. the taste and consistency between them and eggs from the store was so different. I miss them so much. But I still am not sure about just getting eggs from a farmers market. Guess I'm just not a very trusting person - but I will check it out :-) I think I like the idea of finding a farm on the road better tho'. Now I just have to find time to do that too. And of course an egg is basically 70 or so calories and phoney eggs are 30. Sigh. Maybe when I loose the rest of the weight? Now there's a plan! :-) JUDITH Good morning, everyone Well, did not have eggs for dinner last night, but did have them for breakfast this morning. I believe that the only requirement for labeling eggs as 'free range' is that the chickens have to have access to the outdoors. If that access is a fenced in extension to a hen house, this isn't going to really make a difference on the flavor of the eggs. (I don't know that the chickens think a lot of a 4'x4' chickenwire addon to a hen house either) ;-) I was always told that the rich colored egg yolk comes from chickens eating grass and bugs and other 'stuff' in addition to the grain they may be fed. Not that I'm a fan of PETA (and am not promoting them or their ideas), but here is some info on this topic: http://www.peta.org/mc/factsheet_display.asp?ID=96 (Yes, I'm sure it's slanted somewhat, but check out their citations for the article if you want more info). I also think (as Judith mentioned) that many animals (including chickens) can be well cared for on a farm. I would highly recommend purchasing eggs from local farmers (either directly from their farm or from a farmers market). If you are purchasing them at a farmers market, you can ask questions about the type of conditions. Also, it's probably good to seek out the vendor who is always sold out early... just a hunch, but they probably aren't supplementing their inventory by purchasing them from a wholesale supplier. Besides, farmers markets are a great way to get out and get active! Mike
