Guest guest Posted May 22, 2006 Report Share Posted May 22, 2006 Hi Everyone. Sorry I don't post much, I joined/diagnosed in February, but really haven't had much to post about. Now I need advice. What do you have for breakfast? I've tried South Beach cereals & milk, but my BG's soar, even with just eating the serving size (½ cup I believe) of each (milk & cereal). I do o.k. with just yogurt. Guest guest Posted May 22, 2006 Report Share Posted May 22, 2006 They sell just " egg whites " alone in a container, I believe they are packaged to use one serving at a time, I use the egg beaters myself and find the cost not to be high. If it's for your health, don't worry about a few cents on eggs,cut back on something else in your life. Breakfast Ideas Hi Everyone. I do eat eggs several times a week (hard boiled, no added fat) Other times I'll have low fat, no sugar added yogert mixed with some Fiber One cereal (it really bulks up a container of yogurt, and adds needed fiber too!) If I go out for breakfast, I'll have an omelet with whatever veggies they can put in it (I've had the normal onions, green peppers and tomatoes... but also broccoli, sugarsnap peas and various other items ...depending on what's available). When I have an omelet, I'll skip the toast and hashbrowns... Or a '1/2 breakfast special' which is 1 egg (poached if they will do it), 1 strip of bacon and a small serving of hashbrowns (or one piece of toast). But I don't eat breakfast out that often. Eggs routinely (once a month or so) go on sale here for $.33/dozen, and they keep for quite some time in the fridge, so we stock up when those sales pop up. Second, cereal and milk is a straight shot of carbohydrate first thing in the morning, with basically no protein to slow down that glucose rush. If you really love the cereal and milk, try eating a hard-boiled egg alongside (or an egg cooked any way you like). The protein will slow down the glucose absorption and decrease the height of your post-meal glucose spike. I often have eggs for breakfast, prepared in various ways. Sometimes I just do straight scrambled eggs, sometimes I make a vegetable frittata, sometimes a ham & cheese omelet... I will also have a small amount of carbohydrate with breakfast, something like a toasted slice of lite bread with peanut butter on it, or a handful of strawberries, or a small whole-wheat pancake. My husband will also sometimes make quiche, and it is very good to eat cold for breakfast. (And super easy to make, too, especially if you use a cheese crust instead of a pastry crust.) I do a lot of eggs. I like eggs scrambled with vegetables - caulifower and tomatoes; mushrooms and onions; peppers and onions; broccoli; peppers, potatoes, and onions. You can use anything you have left over. You can use egg beaters instead of eggs. French toast made with low carb whole wheat bread (Whole Food's multigrain low carb is the best I've found). One egg and milk will make 6 slices. They refrigerate or even freeze well. Use sugar- free syrup and a little cinnamon on them. Special K high protein is very low carb. Much lower than South Beach cereals. Flavor it up with vanilla extract, some slivered almonds, a little strawberry or kiwi, and some Splenda, and it's actually good. We have tons of breakfast recipes in the files of Healthy Recipes for Diabetic Friends. There are some sugar free (virtually 0 calorie) syrups available too. I've used them in the past, they are not bad tasting if you want the flavor of maple syrup. (I've used them before on a microwaved sweet potato...)
