LOL! What type of brisket - beef or corned beef? Either one usually doesn't need any help as for as sauce, marinades & the like. Corned beef usually comes with a packet of spices that can be opened and added to the brisket. We usually use a crock pot (slow cooker, depending on what they're called by you), and cut up some veggies (potatoes, carrots, celery, kolorabi, etc.) and cabbage (for corned beef). Put it on in the mid-morning on low. Just like grilling, the slower you cook it, the better it is. Oh, add some water, or you'll have to scrape the pot like the dickens! LOL! Both can also be cooked in the oven in a roaster, and even on the grill, if you're so bold and daring. Due to the thickness, make sure the meat is not directly over the heat source (on a 2-burner gas only light one burner, on a 3 or 4 burner, only use the outside burners and put meat over the off one; on a charcoal, spread the coals to the outside & put a foil pan down to keep coals away and place meat over the pan) Sorry about the novel, but I hope this helps. We have a restaurant at the beach called The Jewish Mother and they make an awesome brisket sandwich. It's incredibly tender with little bits of onion and seasoning but not like the sort of pickled corned beef brisket taste. Should I ask the butcher in the meat dept. for a specific kind of brisket then...? I'd love to surprise Corb with a well made brisket. Hope you two are well. Go to the butcher or the meat dept of a supermarket and ask them what they have that's good for a pot roast. I use rump roast, chuck roast, or brisket (sometimes it's just labeled brisket). You can make it in a crock pot or other slow cooker, or if you're like me and don't have one just use a BIG soup pot. Put a little oil in the pot and brown the roast quickly on all sides. Pour out the excess fat, pour in 1 1/2 - 2 cups of water (the roast should be at least 3/4 covered with liquid), an envelope of onion soup mix, some ketchup (about 1/2 cup, you can use tomato sauce or a T of tomato paste instead), a few cloves of garlic (chopped up in little bits), a couple of onions roughly chopped, a couple of cups of potatoes (cut in big pieces). Cover it and cook it over a very low flame on the stove or in the oven (on 225 degrees) for 4-5 hours. In the last hour of cooking, add a bunch of carrots cut into large pieces. If you cook them for more than an hour, they tend to fall apart. When it's done cooking, take it out of the pot and let it rest for about 10 minutes on the cutting board, then slice it across the grain. Take the veggies out of the pot. To make the gravy thicker, add a couple of T of flour or corn starch to the liquid, bring it to a boil and it will thicken up. Yummy!! Add cup of water and seal foil. Cook for 2 hrs. Open foil carefully and slice thin on the diagonal. Cook another half hour. Add more water if necessary. Also can add carrots before sealing.
