WooHooo...Haven't been in years, but since my hubby and I both had WLS we feel so much better...and we decided we want to go to this camping event in April. Just hubby and I this time while we figure things out ;-) Sooo....the only thing I know how to make at a camp is pancakes ;-) And since those seem to be out of the question..I'm wondering if anyone has any ideas on quick, easy recipes WLS that can be cooked in camp... I don't understand that... lets look at this thing.. camping ground bugs hot bugs more bugs did I mention bugs? sleeping in a bag tinklin in an outhouse takin a shower with a spicket hug through a wall... if you are LUCKY *quirks a brow...* and THIS is called a vacation.... and the yankees wanna call ME odd cause I want a 'nana sandwich... *shrugs and goes back to drooling cause its hours later and now she is craving a 'mata sandwich... which is ALL gina's fault..* *knows she doesn't have to bother putting her paw on THIS post..* Camping Food ;-) Silly question? I've been living in Florida for nearly a year now, but I don't think Florida really counts as the south. At least not the part that I'm in. Only two people on my street are actually FROM Florida (meaning they were born and grew up here). Everyone else moved here - most of us within the past year. You got somethin' against bugs Kristi? How 'bout furry spiders? Like those? There was a nice big juicy one crawling across the hall here the other day (I can NOT get used to these Florida spiders that are the size of small dogs - with just as much hair!) and I yelled to DH to " come make it go away " . Well, my baby (who turned 3 today) saw it and decided that it was a friend. He squatted down next to it and started talking to it. It was actually kind of cute until he tried to pet it!! I don't know who freaked out more, me or the spider. lol. I screamed. The spider ran. The baby laughed thinking it was all very funny. My husband comes running thinking that something is seriously wrong (well, something WAS seriously wrong. My kid was gettin' all cozy with a freakin' spider!!!). Guest guest Posted March 14, 2003 Report Share Posted March 14, 2003 Mandy, sounds like it'll be a blast! Can you tolerate eggs? Chicken breasts are good and easy to grill over a fire pit, provided you have a tripod grill (check your local Wal-Mart, Lowe's, or some kind of store that sells camping gear), fish is good, too, particularly salmon or mahi-mahi or any type that's similar (trout, perch, anything that is whole or has skin on, but you don't have to eat the skin!). Also, cook veggies on a coleman stove (or any brand similar). You can also take the meat (be it chicken, fish, etc) and veggies along with a tablespoon or 2 of a condensed soup like cream of mushroom, chicken or celery (the healthy request kind, read the label on the can) and some margarine and combine them in heavy-duty foil, and make a sealed pouch, and cook right in the coals of the fire, turning once after 5-10 minutes (to check for done-ness, simply open pouch and test meat - if it's chicken or beef, the juices should run clear not pink, if it's fish it should flake with a fork). If we lived closer and could join you (we're in Wisconsin), you wouldn't need to worry about cooking, since I do all the cooking when we go - hence my title of Grill Master Chef. LOL! Guest guest Posted March 14, 2003 Report Share Posted March 14, 2003 Try putting a hamburger patty on foil, with a thin slice of onion on top, and maybe some mushroom soup, and a little cheese, and wrap up and put in the coals for a while. Or bacon-wrapped chicken chunks on skewers with green or red peppers and yellow squash Or canned or 's chili warmed up in a pot. Or thin-sliced smoked turkey wrapped with some provolone, and a bit of mustard and mayo. Or turkey sausage or kielbasa cooked over the fire on sticks. Or chicken in foil with a little cream of chicken soup and carrot and zucchini sticks cooked in the coals. When I camp, I always take potatoes, and wrap them in two layers of foil, and put them deep in the coals at bedtime. In the morning, I have one for breakfast. Sometimes they get burned up completely so I have something else instead! Sometimes they're hard as rocks. But sometimes they are perfect and very delicious and still warm. Pre cooked meat (we liked hamburger, already browned & drained), chopped up potatoes, peas--use your imagination. Wrap in foil, snugly. Bake for awhile at home,.
