I am thinking I probably need to cut some more things out, too...my problem is that I need protien and I am finding I am having issues with eggs, peanut butter and dairy products. I don't want to eat meat all the time! I do eat butter, but not often. I guess I thought high fat wasn't good... I do like to cook so I will be experimenting a lot! Kim Re: My lab work is IN!! I Kimberley, I have felt much better going gluten free, lots more energy and some of my health problems resolved after a few months - eg varicose veins started dissapearing, hearmoroids clearing, acne etc. However I've made a lot of other changes to my diet cutting out refined sugar, alchohol, dairy and ALL prepackaged foods etc has also really helped. I now cook everything from scratch, I've learned to really enjoy cooking! I gave myself 4 months to transition over gradually and that made it a lot easier. It's actually a lot harder for me to give up smoking!!! Still trying to do that! I wonder if one of the reasons you are feeling worse could also be the drop of energy from all the carbs in the grains? Did you increase good fats when you reduced carbs - eg coconut oil, butter, olive oil, fish oil? That would probably help with energy levels. My diet is high fat, moderate protein and low carb. It is definatley hard to begin with but if you stick with it you should gain many rewards and it becomes much easier with time! Reards, Cara > > Cara, I just went gluten free myself a few weeks ago. A great source of very good, best quality fats and you can make various dips and things with it. Coconut oil and olive oil used generously can help too. Nuts (avoid peanuts...tend to contain molds and hard on thyroid). Almonds from a quality source are what most people can tolerate, especially if you soak them in water overnight and rinse in the morning before eating to activate their enzymes. I then grind mine and sprinkle in whatever I am eating and it makes eating them easy. I add ground organic cranberries with my nuts in a lot of dishes for an added zest. Heres some further reading if you are interested in finding out more: http://www.westonaprice.org/knowyourfats/index.html I know that it is really hard to overcome the conditioning that we all recieve that all fat is bad!! I used to have a drink every day with 2 TBS of Coconut oil 2 TBS butter cinamon and nutmeg and 3 eggs and boiled water. You can add stevia too but I never bothered with it. You blend them all together. Sounds strange but it's actually really really nice and I would look forward to having it every day. This was from one of the candida groups I'm on. The only thing is you need to work your way up slowly with the Cocount Oil so that your body gets used to it gradually. For example you could start with 1-2 tsps and increase after 5 days. This is a good way to get more fat. If you have a problem with eggs it might not be that great for you obviously. Did you see the post I sent earlier with links to sites with recipes? My brain just dowsn't want to deal with it right now, so I'm going to go into denial mode for a few days about the gluten intolerance thing. Maybe after a few days on HC my brain will be ready to think about it and sort out what I can eat and what I need to avoid. I really appreciate all the links and everything.
