Maple Pecan Pie.. Sugar free

Today, my cousin, who is a recently diagnosed diabetic, and with a tremendous

sweet tooth, made a sugar free maple pecan pie.. This is the best sugar free

pie I have had..

I am waiting for her to email me the recipe and then I will post it for all

of you..

Ok.. here is the Maple Pecan Pie.. Sugar Free version

Crust:

1/2 cup firmly ground blanched almonds

1/4 cup Atkins baking mix.. my cousin used regular baking mix

3 packets sugar substitute.. cousin used Splenda

1/2 stick butter, melted

Filling:

1 1/2 cups sugar free maple flavored pancake syrup... Used

Log Cabin brand

4 eggs

18 packets Splenda or sugar substitute.

5Tablespoons butter, melted and cooled slightly

1 teaspoon vanilla extract

1/2 cup toasted pecan pieces

Heat oven to 350 degrees F. Mix ground almonds, baking mix, and sugar

substitute in large bowl. Stir in butter with fork.Chill crumb mixture 20

minutes. With your fingertips , press crumb mixture onto bottom and up sides

of 9 in pie dish. Bake 7 minutes or until browned and set. Remove from

ovenand cool to room temp.

For filling, bring syrup to a simmer in a small saucepan. Cook 10 minutes,

until reduced by half. Remove from heat, coo to room temp.

In large bowl, whisk eggs, sugar substitute, melted butter, and vanilla

extract. Add toasted pecans, and combine well. Pour mixture into preprared

pie crst and bake 20 minutes or until the edges are firm, the center will be

quivery. Transfer to a wire rack to cool.. Enjoy..

Dear Sis,

Yes, you can use a regular pie crust and be sure to bake it first.. this

recipe makes a 9 inch pie.. so I guess about 8 slices or so..

depends on how you slice pie I suppose..
