One thing to remember with grains is that they contain phytic acid. Phytic acid

inhibits the absorption of protein and nutrients and is one of the main problems

with unfermented soy products; soy has a very high phytic acid content and only

fermenting can solve that with soy. With other grains, such as oats, simply

soaking overnight can take care of this problem. If you are that sensitive, try

soaking the GF grains overnight before ingesting and see if that helps. Google

phytic acid and you will get a load of info!

We are on the same page! I do soak grains like oats, or I should say I

tried that. Mainly though, my blood sugar and IBS and my joints don't

like grains, so I should avoid them soaked or not. The hypoglycemia

and joint pains and IBS reaction happens with me whether grains are

soaked or not, sadly.
