We have been making the beet brownies (from the " constipation protocol " on pecanbread) for awhile using pecan butter, but we recently started making them into mini-muffins. If you make them in cupcake liners they sort of stick to the paper, but if you freeze them and eat them right out of the freezer they come right off the paper. They don't get completely hard so you can eat them that way and they almost...ALMOST!...taste like little morsels of chocolate! We were kinda excited!! Kelley W.
