Guest guest Posted March 18, 2009 Report Share Posted March 18, 2009 Zucchini Bread from Cooking to Heal Little Tummies by Jenna and Hagood 3 eggs 3 cups almond flour 2 t. vanilla 1/2 t. baking soda 1/3 c. safflower oil 3 cups zucchini--peeled and grated 2/3 cup honey Using a large bowl, mix all ingredients together thoroughly. Preheat oven to 350 degrees. Line several mini-loaf pans with foil and coat foil with oil. Fill loaf pans 1/2 full and bake for 30-40 minutes, or until a toothpick comes out clean.
