Is it okay to just take it right from the heat and stick it in the fridge?AlyssaI normally run mine at least 36 hours- 24 hours at 100-110F, and then on the counter for 12 hours to cool before I refrigerate it. Some people like to let it cool outside the fridge first so the fridge doesn't have to work as had. It will be OK to eat. You may have a few less good bacteria, since they will have run out of food (the lactose in milk) and the yogurt may not last as long in the fridge. But heck, my yogurt never lasts long enough to bad, any way! Guest guest Posted May 2, 2009 Report Share Posted May 2, 2009 When you're talking about billions of organisms per cubic centimeter, I really don't think it matters that much- particularly when one might consume half a cup or more at a time. More likely, they just stop growing and proliferating- not dying, just shutting down their growth rate.
