The veggie bit of the Aynsley Harriott book 'Meals in minutes' is quote good, and also the Vegetarian student grub guide by Alistair , complicated meals stripped down to the bare essentials to make them quick and easy. (presuming that students either have no time between pints or can't be bothered to cook) I know which I was. Hope this helps, Oh yes, Tell you what is the best(easiest) meal for everyone is :- 1 Tin tomatoes 1 Tin veggie soup 1 cup rice 1 onion veggies stock (1pint) veggies hotdogs/sausages/burgers cut into pieces. (anything else you have to use up) Put the lot in a saucepan and cook for about 25 mins or until not watery, Serve with loads of bread and butter and easily pureed for tots.
