Guest guest Posted September 27, 2000 Report Share Posted September 27, 2000 Zucchini Bread (It's really good) 2 eggs 3/4 cup sugar 1/2 cup oil 2 teaspoons vanilla 1 1/3 cups grated squash 1 1/2 cups flour 1 tsp Xanthan gum 1 teaspoon baking powder 1/2 teaspoon soda 1/4 teaspoon salt 2 teaspoons cinnamon, ground Cream together eggs and sugar in a bowl; beat until thick. Stir in oil, vanilla, and grated squash. Mix until well-blended. Fold in flour, baking powder, soda, salt and cinnamon, stiru until completely mixed. Pour into a greased loaf pan. Bake in 350 degree oven for 40 minutes, or until the bread is done. Cool in the pan for 10 minutes. Remove and complete cooling on a wire rack. It has a great Zucchini bread recipe that I tried yesterday and YUMMMYYY!!!, I am going to invest in the small loaf snack size pans at s for easier packaging for lunches. I actually got to eat zuchini fries (breaded in rice flour and seasoned) so I am hoping I could get hime to eat a muffin or something. I am having a really hard time with breakfast. A (Jefs Mom) Quinoa Day 1 large zucchini 3 eggs (1 tsp arrowroot for every egg works great for egg allergic folks) 1 c. beet sugar 1 c safflower oil 1 tsp. Vanilla 1 ½ c tapioca flour 1 ½ c. quinoa flour 1 TBL xanthan gum 1 TBL cinnamon 1 tsp. Sea salt 1 tsp baking soda Quinoa Day muffins: Shred zucchini into thinly disguised vegetables. Make sure to use NON alcohol / natural vanilla. Mix all ingredients thoroughly. Bake 375 degrees for 25-30 minutes. Source: Modified " Special Diets for Special Kids " Note: They are extremely moist and everyone eats them (even the NON GF CF family members!)
