I am certainly no expert, but constant hunger, based on my personal experience, is from either insulin resistance (which can turn into Type II diabetes), hyperthyroidism, or hypoglycemia. His thyroid labs don't show hyperthyroidism, in fact, he may be a little on the low side, and his cortisol isn't low, so he shouldn't be hypoglycemic. Which is why I recommend glucose testing. If he IS becoming insulin resistant, changing his diet can help. He would benefit by going on a diabetes type diet, which is medium protein, veggies for carbs, and high in fat like nuts and olive oil. Diabetes is very prevalent in our family so I am very concerned about just this. I will grab the books you linked and get ready for the battle of the century, changing his diet, big time...
