Here's what the USDA nutrient database says about boiled peanuts. You'll just have to gauge for yourself whether this would be an acceptable investment in your daily carbohydrate allowance.

1 cup of boiled, salted peanuts, shelled:

Carbohydrate, by difference

38.268

Fiber, total dietary

15.840

This isn't a no-carb, WOE.

I've seen many posts from people about eating nuts. I eat them myself. They

aren't a non-legal food.

I just don't know anything about " boiled peanuts " but assume they're

precisely what the name implies.... boiled, peanuts.

-Marlena, here in TN, not far from the AL border my DH boils peanuts.

He puts raw peanuts, in the shell, in a crockpot with water covering

them and adds(far too much) salt. He then cooks them on low for at

least 12 hours. I personally liked them cooked a little less and a

whole lot less salt!

Gotta go. Woke up earlier than I planned but strong coffee and my

breakfast dish should carry me to Erie PA by early morning. Then I'll

see how awake I am before I take off again.

May get to Mom's birthday yet.

PS

I have good LC snacks packed and have frozen salmon and cat fish with

me to grill. I'll find the fresh veggies there, I hope!

I guess I still don't get it! LOL. when you boil them do they get mushy and

sorta like black-eye peas or what?
