How much sweetener is used in it as compared to, say, Mocha Mix that has 12 grams of sugar per 1/2 cup. I think that is fairly low in sugar as I haven't been able to find any desert that has a lower amount. Also, how do you make homemade ice cream? Guest guest Posted September 3, 2000 Report Share Posted September 3, 2000 If you search the archives you will find a number of recipes for GFCF ice cream but I took some from a few different recipes and created this: Scarry's Bananas Gorilla Banana Ice Cream 2 eggs 1/3 cup sugar 2 cups coconut milk, split 1 teaspoon banana flavoring 4 bananas, 3 smooshed and 1 in large chunks In a small saucepan, lightly whip 2 eggs, add sugar. When well mixed, add a cup of coconut milk (would be REALLY good to add a split vanilla bean here, but I didn't have any) and bring to boil, stirring constantly. Remove from heat. Pour egg mixture into mixer bowl and add another cup coconut milk, banana flavor and smooshed bananas. Mix on high for 3-5 minutes. Let cool in refrigerator for 2-4 hours. Mix in cut bananas and adjust sweetness or flavor to taste. Pour in ice cream maker. The banana flavoring makes the taste of coconut barely noticeable.
