Cornstarch Bread, lost recipe

I can not find my cornstarch bread recipe. I think I missed an

ingredient. Could someone mail me a copy of the origional recipe.

Posted sometime in june or july. For some reason I can not search

archives prior to 7-22-2000!!! No topics prior to that date come up.

Please post the recipe to the list,as I am interested in it too....on

the hunt for bread recipes!!!

Also, anyone know how long it will take before I get email? It has

been 12 hours since I joined and although I got the welcome letter

okay, I have had to keep coming to the egroups website to see the

letters. Just wondering.....

this is what I have on the cornstarch bread. I have not tried it yet

myself.

Corn starch bread

2 1/2 cups cornstarch

1/3 cup potato starch

2 tablespoons rice flour

1 large egg white

4 1/2 teaspoon yeast

1/4 cup sugar

1 1/2 teaspoon xanthum gum

2 cups of hot (I used hot tap water) water

2 1/2 tablespoons vegetable oil

1 1/2 teaspoon salt

1/2 tsp. of unflavored gelatin helps a lot.

Combine flours, yeast, xanthum gum. Add water and egg (my eggs seemed

small so I used 2 egg

whites. I also did not have potato starch on hand so I added 1/3 cup more

cornstarch). Mix the above

ingredients on medium for 2 minutes (with mixer). Cover and let rise for 15

minutes.

Pre-Heat oven to 425. Spray loaf pans with Pam (2 - 4 1/2 X 8 pans).

After bread mix rises....

add oil and salt and mix on low until smooth (about 1 minute) Pour batter

into pans. Cover with plastic wrap,

let rise for 20-25 minutes (or until batter reaches the top of pan. Bake

at 425 for 25 minutes, remove from

oven, cover with towel for 10 minutes. Remove from pan and continue to cool

on cooling rack. Slice at

room temperature. Bread will be very very soft so you need a good knife.

This bread is better on the first

day. I combine all the dry ingredients for several recipies at once,

enclose them ziplock freezer bags, one per

recipie, and freeze til I am ready to use them. Makes life easier.

tries now. Each try

consuming a total of 1 1/2 hours of my day!! Each time my bread either

doesn't rise AT ALL or it falls as

soon as I get it out of the oven. >>

I had the same problem. I've tried making it in little bread pans and

those turned out great. When I

make it in my big bread pan it always falls. Give it a try! Viviana

My little guy loves the cornstarch bread...sounds crazy but it is real

good. I experimented a little and

found the addition of 1/2 tsp. of unflavored gelatin helps a lot.

Just a note on the cornstarch bread. I've tried this recipe about 5 times.

It has fallen 4 of those. Someone suggested using even smaller pans than 8 "

loaf pans and I did and it finally didn't fall!! It has a wonderful

consistency and my kids loved it!! I also tried it without eggs because we

found out our girl is very allergic to egg whites and it just isn't the

same. Happy baking!

Just a note on the cornstarch bread. I've tried this recipe about 5 times.

It has fallen 4 of those. Someone suggested using even smaller pans than 8 "

loaf pans and I did and it finally didn't fall!! It has a wonderful

consistency and my kids loved it!! I also tried it without eggs because we

found out our girl is very allergic to egg whites and it just isn't the

same. Happy baking!
