Guest guest Posted March 9, 2009 Report Share Posted March 9, 2009 I make jerky quite often, using beef. Not sure how to use ground turkey in making jerky, though. Usually you slice the meat into thin strips (the thinner the better), lay it on a tray or hang it over a rack, in a low-heat oven or dehydrator. If the meat is lying on a tray you have to turn it over several times during the drying process. Generally takes about 12 hours to dry the meat in the low-heat oven or dehydrator. The jerky is " done " when it feels dry to the touch, and isn't oozing fat any longer. I just use salt on the meat before I put it in the oven to dry, but you can also marinade the meat for 6 hours or more before drying, or use spice rubs as you put it in the oven or dehydrator before drying.
