Guest guest Posted April 7, 2005 Report Share Posted April 7, 2005 After all of the talk the other day about low carb bagels and English Muffins, I decided to try some of the brand. Got both bagels and English Muffins but have tried only the muffins. It's been a long time since I've had an English Muffin and these seemed much more crumbly than I remember and had what I thought was a pronounced sweet taste. I've found this sweetness in the few LC breads I've tried, too, and I don't like it. I decided to check my BG at the beginning and then every 15 minutes for two hours. I had a whole muffin (14 carbs) and two fried eggs (.6 carbs each) for a total of 15.2 carbs (this has fiber subtracted). Pre-lunch reading was 109. The rest mark every 15 minutes. 109 111 117 119 (one hour) 122 126 (one and a half hours) 119 116 (two hours) I didn't continue testing until I got down to 109 again because I was tired of sticking myself and I could see the downward trend. So it seems these don't have a huge impact on my BG, at least at lunchtime. Breakfast might be another matter as my reading are always higher then. Now if I just liked the muffins more.
