I'd be very interested in this as well!AlyssaFellow SCDers,Has anyone come up with a recipe for muffins made with squash as opposed to nut flour? I'm having more and more difficulty digesting nut flour/butter products. I'd love to be able to make muffins from squash, eggs, olive oil...Any help would be appreciated.Thanks,GERDS and chronic CSCD 1 yr

Have you tried the recipe for Butternut Pecan Pie, minus the pecans in the

topping, at

The ingredients include squash and eggs, as well as spices and honey, but

not olive oil.

Still, this might be a good starting point for a muffin recipe.

I have only ever baked this as a pie, in a large round glass pie dish. I do

include the pecans in the topping, because I am able to eat nuts. This pie

recipe is very good, but there is a lot of prep work involved, starting with

cutting the butternut squash in half, scooping out the seeds, then cooking

the remainder in the appliance of your choice. I usually bake a few

de-seeded, halved squashes at a time in the oven, rather than steaming them

in several pots or microwaving them one at a time. The cooked squash flesh

has to be separated from the skin, then mashed or pureed for the pie.

I wouldn't know how to convert it to a muffin recipe, in terms of changes in

baking time (probably shorter) or temperature.

Thank you for the great idea! It is indeed a good starting point. Perhaps

mixing in a little nut flour will make them less mushy! I'm going to try it out

this weekend and will let you all know how they turn out.
