I love chicken scampi

2 pounds diced uncooked chicken

1 onion diced

4-6 cloves garlic minced

1 stick butter

Let the butter melt in your skillet, add onion and garlic until soft.

Add chicken and cook until done.

" Noodles "

4 Zucchini cut into " noodles " using a mandolin being careful not make

noodles out of the middles. You might need to peel the zucchini first.

Add Zucchini to the scampi and cook for about 5 minutes.

Even my super picky 7 year old loves it. It reheats well too!!! You

can even add it to her thermos to take to school.

If you find the zucchini adds too much liquid, you can salt the

noodles and let them drain for a couple hours, squeezing them with a

cotton cloth before using. I do this when I have time, but you'll

need a lot more zucchini because the volume will almost reduce in

half when salted.
