Well, the need for low-fat just blew my suggestions out of the water! My husband loves Hurricane Dressing (an oil and vinegar mix). I do butter/ghee with lemon juice and garlic. Typically, the proportions of vinegar and oil are 1 / 4, ditto the lemon juice and butter.
