Hi Alyssa, Here in southern Italy extra virgin cold pressed olive oil is poured over everything, all veggies after they're cooked and all meats since the meat here is very lean and has no fat on it, it tends to be dry. There is a bottle of olive oil on every table here like some American homes use ketchup!! It's good on eggs and even cheese. If you get the really good dark green kind the taste is great, very fruity. Look for the kind that has a dark green color and some gunk in the bottom of the bottle, it's the most virgin and least processed.

Hi all,I'm just looking for ways to use olive oil where it isn't heated. I've read that heating olive oil can damage and mutate the fats in it and turn them into trans fats...I don't know whether that's true or not. But anyways, is olive oil good in egg/chicken/ ??? salads or anything? I'm not really eating lettuce-y type salads right now, too much fiber, but can you think of anything else an olive oil/vinegar salad dressing might be good on?Thanks!AlyssaUC Sept 08
