DiGiorno Parmesan Cheese: legal question

Instead of buying pre-shredded parmesan cheese, I now buy the

triangular block of parmesan cheese at the local grocery store. In

this case, the only brand is Digiorno. The ingredients include

pasteurized part-skim milk, cheese culture, salt, and enzymes.

The legal/illegal list indicates that parmesan cheese should be used

sparingly. What is the reason for this?

Finally, Elaine had indicated in the BTVC book, I believe, that

cheese in which milk has been added after the pasteurization process

should not be consumed. How can I tell from the ingredients that the

Digiorno cheese has had no such " illegals " added?
