Guest guest Posted February 28, 2009 Report Share Posted February 28, 2009 Hi ...these are a mainstay of my diet ( as I am still dairy in tolerant & can only do eggs rarely ) I love them...my faves are the muffins which I do with grated carrot or cooked squash & pumpkin pie spices ( yummmmm) & also i do the cookies often --though i do add 1 pkt knox gelatin to the 1/2 c water to bind them as otherwise their too crumbly... i make double batches & freeze ...and make each batch from different nuts so i can "rotate" them ( to avoid developing an allergy to them, since my leaky gut gets sensitized very easily!!) My fave cookie one is 3/4 pecan flour & 1/4 ramon nut flour ( which IS a nut, & I don't react negatively to it ) because they totally taste like chocolate!!! I add honey into those ones & even my kids friends ( who eat "sad") love them & beg for them!! ...in both the muffins & the cookies I add the knox to bind, and sometimes a bit of honey ( if i'm sharing them with my kids lol) & then their great! hth, gisele Quote Link to comment Share on other sites More sharing options...

They describe the flavour as a cross between coffee & chocolate ( my 2 faves!!) & the coolest thing is it is helping to save the rainforest & feeding the indigenous peoples in those regions!! also check out www.theequilibriumfund.org/page.cfm?pageids=2880 it shows ramon nuts nutrient profile & it's amazing!! & there are also some testimonials of how it has saved people from starvation in those areas ...so it's a very "helpful" product!! It is kinda pricey ( 16$ a pound!!) but we don't use much ...about 1/4 to 1/3 of a cup per muffin recipe adds in enough chocolate flavour to = a treat! Thank you for mentioning it and teaching me something new. When I go on to teeccino's web site, all they have are coffee or drink products--no mention of nut flour. Any suggestions? I think I'll try to contact them on Monday and see. I would love to add it intp baked goods for that flavor and I know my kids would love it too.
