However, since this particular brand is made of part-skim milk and is so much cheaper than some of the other artisan cheeses, I've worried a bit about the reasons. Could it be processed, or perhaps the big brand name allows them to sell relatively small blocks at lower prices?Well okay. If you are worried about it, switch brands to something else,or contact the company and find out. Maybe it is just less aged and madein the US or something, instead of being imported.
