They call it a " manufacturing aid, " which is not the same thing as an " ingredient. " You are correct that ingredients must be listed in order of amount, but manufacturers will try any trick they can to make things easier for them... which endangers our quality food supply. For instance, in the early days of SCD, I was hunting for things like a legal dried tomato powder, because I figured it would be so much easier to make sauces and things if i could find that. Elaine said I wouldn't, but I was determined. I found one company who assured me, over, and over, that their product was 100% pure tomatoes. I kept digging around and they finally admitted that in order to powder it, they used a " food grade matrix. " What, I asked, was this " food grade matrix " ? They finally answered, " Maltodextrin. " I pointed out that maltodextrin was one of the items I told them I absolutely could not have, and the response was, " Oh, but it's just a manufacturing aide... there isn't enough of it to be a problem for anyone....
