I hope they're good cold...AlyssaDear Alyssa,I wonder if you have tried the SCD pancakes?Quite simple and quite yummy, and possible to do some extra for a later snack.Mash up a -ripe- banana. Scramble in an egg. If you like, a little salt, if not, no need.Cook in as large a fry pan as you have: best to not make them huge, but into 3 or 4 pancakes.Allow to cook quite a while on one side to firm up before flipping over to cook on other side. I have a pot lid with holes in itoriginally meant to be able to drain pasta, it was a gift. I often use that lid on the pan; you can use a lid on the pan, set slightly askew to keep heat in, let moisture out.The pancakes are quite yum, and surprisingly pancake-y. I have been meaning to try other versions: mashed carrots with an egg, or zucchini. Has anyone done other versions?
