Guest guest Posted March 22, 2009 Report Share Posted March 22, 2009 Is there any way to make sesame paste (sesame, honey, vanilla whizzed up in processor) to have the texture of Halva; http://en.wikipedia.org/wiki/Halva Mine just comes out as a paste which is yummy but I love that " bar " type kind of crumbly texture that I grew up on! And, I think Terry is correct about working it by hand - this weekend I tried to make the lolipops from BTVC this weekend for my kids, and I cooked the honey to 160F on a candy thermometer, and the mix turned out too soft. I abandoned the lollipop idea, poured the mix onto a greased parehment paper lined cookie sheet, let it cool, and then I had a taffy like substance - a few hours later, I oiled my hands and kneaded it like bread dough, and kind of got a chewy honey taffy. I pulled it into balls - They didn't like it, but it is a interesting texture to kind of suck on. Side note - if anyone has experience making the lollipops from BTVC - please share - my kids are looking for something hard to suck on! You made me go look and I found this recipe--you have to scroll down the page. I guess part of the texture is from working the mixture on a slab before putting it in a loaf pan.
